We took the spirit that even gin-haters can’t resist, and added another layer to it. We let our Organic Gin hibernate for over 6 months in ex-bourbon barrels made of rich white oak. When we pull it out, it keeps the wild sage and douglas fir botanicals of the Northern Rockies, now infused with vanilla, orange, and baking spice notes. It’s a perfect way to put a new spin on a Gin and Tonic, OR an Old Fashioned.
BASE SPIRIT: Neutral Spirit distilled from organic Idaho wheat.
WATER: We only use pure, mineral rich water that flows to us from the surrounding Northern Rocky Mountain peaks.
NOSE: Bright juniper and spicy clove meld with vanilla and notes of orange peel, anise, and sage.
TASTE: Smooth, floral and subtly sweet with orange blossom, baking spices, pink peppercorn, and vanilla bean.
FINISH: Long and lingering, the finish is nutty & delightfully spicy with hints of herbaceous botanicals.
